With all that’s been going on, I’ve had little time for actual cooking, but I wanted to share this recipe, adapted from this one at Allrecipes.com.  If you are still looking for something to take to that picnic this week, this is the recipe you will want to make!  This slaw is crisp, crunchy, light and refreshing.  It goes together quickly, and no cooking is required, so you don’t need the stove on these hot days.  Most importantly, it’s delicious!

What is jicama?  I’m glad you asked!  Jicama (pronounced HIK-ka-ma) is a root vegetable, that originated in Mexico.  In fact, it is also called the Mexican yam, or Mexican turnip.  It’s actually a member of the legume family (think peanuts and lentils).  It’s creamy white inside.  Jicama is usually eaten raw, and the crisp texture resembles that of a raw pear or potato.  The taste, however, is slightly sweet and starchy, and reminiscent of certain apples, or raw green beans.  Here is a picture of it:

It needs to be peeled before you can use it.  For me, it seemed to be a little tough for a standard vegetable peeler, but easy enough to “peel” with a knife because the skin is fibrous.

If you’re wondering about nutrition, jicama is impressive!  Like all vegetables, the main macronutrient is carbohydrate, mainly in the form of dietary fiber – which helps fill you up and keep you fuller longer!  One cup contains only 45 calories, but 6 grams of fiber (shoot for at least 25 grams per day), and almost half your daily value of vitamin C.  It also contains some vitamin A, B vitamins, and calcium.

PATRIOTIC JICAMA BLUEBERRY SLAW

Jicama Blueberry Slaw 2

Serves: 12

Ingredients

1 large Jicama, peeled and shredded

2 Red Bell Peppers, julienned

1 pint Blueberries

2 Tbsp White Wine Vinegar

2 Tbsp Lime Juice

2 Tbsp Blueberry Honey

2 Tbsp Olive Oil

2 Tbsp Fresh Mint, minced

Zest of 1 Lime

Directions

1.  Put shredded jicama, julienned peppers, and blueberries in a large bowl.

2.  In a separate bowl, add remaining ingredients, and whisk until combined.

3.  Pour dressing over slaw and mix well.

4.  Chill for several hours before serving.

    Like your “reblog” and every recipe has looked great since you started. I am still slow to gather ingredients and give each a try although some of your dishes match similar things I have been making. 🙂
